The wizard of wine - Jean-Louis Pinto from ES D’AQUI have his cellar nestled among the rolling hills of Limoux in the village of Moulin-Neuf, south of France. In this region, the vines were abundant until the big attacks of mildew at the beginning of the 20th century.
Like his friend Anthony Tortul from La Sorga, he is a négociant: which means he buys grapes grown organically by other winegrowers and vinifies them in his cellar using 100% natural methods with zero added. With over a decade of running his business as a négociant, and some vintages adorned by labels with detailed maps of where the grapes were grown, Jean-Louis has proven that his micro cuvées really do encapsulate a sense of place.
