Hubert and Heidi own 4 hectares of vineyards near the town of Eguisheim, located 7-8 km southwest of Colmar in the Haut-Rhin region of Alsace. Their vineyards are divided into 7 parcels, producing between 8 and 10 different wines. These fields are a model of biodiversity, tended exclusively by their faithful workhorse, Skippy, with no machines involved. In the cellar, they adhere to a philosophy of minimal intervention, allowing the wines to express their natural character. 

Hubert's great-grandfather and grandfather were traditional farmers who maintained a largely self-sufficient farm with cows, chickens, pigs, grain, and, of course, wine. The 'wine house' on their farm dates back to the 1920s. However, during the Second World War, much of Alsace's wine production was devastated. 

In 2000, he and his wife Heidi decided to establish their own domaine. They were determined to move away from producing technical wine from cultivated fields and instead focus on creating honest, natural wine—returning to their roots.
