Their vineyards are divided into 7 parcels, producing between 8 and 10 different wines. These fields are a model of biodiversity, tended exclusively by their faithful workhorse, Skippy, with no machines involved. In the cellar, they adhere to a philosophy of minimal intervention, allowing the wines to express their natural character.&nbsp; Hubert's great-grandfather and grandfather were traditional farmers who maintained a largely self-sufficient farm with cows, chickens, pigs, grain, and, of course, wine. The 'wine house' on their farm dates back to the 1920s. However, during the Second World War, much of Alsace's wine production was devastated.&nbsp; In 2000, he and his wife Heidi decided to establish their own domaine. Because the Ménards are one of those ‘dare and try’ winegrowers they converted very early – in 1996 – to organic farming, then to biodynamics. Their son Jérémy is gradually taking over the succession and they make it a point of honor to refuse any chaptalisation (addition of sugar) or any oenological manipulation. Today, all the cuvées are under the Vin de France appellation. It is located on the Audois coast between La Palme, Roquefort-des-Corbières and Leucate. A rich terroir that varies between rolled pebbles on the edge of a pond and limestone cliffs on the Mediterranean coast. Marc always work the soil gently in order to bring it back to life and make room for biodiversity. To do this, he is gradually replacing the tractor with the horse and weeding by hand when the season no longer gives the opportunity to let the cows graze. In this region, the vines were abundant until the big attacks of mildew at the beginning of the 20th century. Like his friend Anthony Tortul from La Sorga, he is a négociant: which means he buys grapes grown organically by other winegrowers and vinifies them in his cellar using 100% natural methods with zero added.
